Ingredients:
- 2 cans (15 oz each) black beans, rinsed and drained
- 3/4 cup Feta Cheese
- 1/3 cup red onion
- 1/4 cup fresh lemon juice
- 1/3 cup fresh mint leaves, chopped
- 3 Tbsp olive oil
- 1/4 tsp salt
- 1/4 tsp ground pepper
Combine all ingredients in a bowl, tossing to coat. Cover and refrigerate 30 minutes to blend flavors. Make and serve on the same day as mint tends to lose flavor when stored over night.
