Blueberry Vinaigrette:
Combine all ingredients in a blender until well blended and smooth:
- 1 cup blueberries, washed and patted dry
- ½ cup white wine vinegar
- 2/3 cup honey
- ¾ cup extra virgin olive oil
Refrigerate until ready to serve.
Mixed Greens Salad:
- Mixed greens
- 4 ounces goat cheese crumbles
- 1 cup toasted pecan pieces
- 1 cup blueberries
