Steamed cabbage Jamaican style is a tender, sweet, spicy & overall flavorful salad. A delicious side dish loaded with vegetables.

Ingredients:
- 1 medium size cabbage head
- 1 big carrot
- 1 bell pepper
- 1 onion
- ½ Scotch bonnet pepper (aka Caribbean red pepper) optional
- ¼ cup vegetable broth
- 1 garlic clove, minced
- 2 thyme sprigs
- 1 TBSP coconut oil
- 1 TBSP white wine vinegar
- Salt to taste
Cut cabbage, carrot, onion, and bell pepper into julienne. Make sure they are not too thin. Clean them well.
In big pot, add coconut oil with garlic clove minced, thyme and Scotch bonnet pepper cut into tiny pieces. Sautee on medium heat to release flavors into oil.
Add all the vegetables, vegetable broth, and white wine vinegar. Add salt to taste. Put a lid over the pot to steam the vegetables. Steam over low heat to cook the vegetable gently. Cook for 12 – 15 minutes.
