Easy Quiche

This recipe works really well with all vegetables or create your own cheese, vegetable and meat combinations.  (Swiss, mushroom,  bacon –or– Gouda, sausage, onion –or– Broccoli, cheddar, ham). Enjoy!

Ingredients:

  • 1 pie crust (I use 9″, deep dish frozen crust, any variety, although feel free to make your own)
  • 1 c. of milk
  • 4 eggs, beaten well
  • 3/4 c grated sharp cheddar cheese
  • 1/2 of a red pepper
  • 1/2 c diced onions
  • 3/4 c chopped spinach
  • 4 pieces deli ham cut into small pieces
  • Salt and pepper to taste

Directions:
Preheat oven to 425 degrees. Using a fork,  poke a few holes in bottom and sides of the frozen crust and then place it on a cookie sheet. Bake in 425 oven for about 4-5 minutes. 
Mix together eggs, milk, 1/2 c of the cheese, red pepper, onion, spinach, ham, and add in any salt or pepper to taste (I use about 1 tsp of Montreal Steak Seasoning).
Remove lightly browned crust from oven and pour liquid mixture into the hot crust. Return quiche to oven and turn temperature down to 350 degrees. Bake for 35 minutes, then put remaining 1/4 c of grated cheddar on top, and return to oven for 5 more minutes while cheese melts. Total cook time is about 40 minutes (or when knife is inserted and comes out clean, not eggy).
Yield 6-8 slices of quiche.
