Firehouse Chicken

This recipe came from a NYC firehouse cook book. It’s similar to baked BBQ chicken… good for feeding large groups.

Ingredients:

  • 2.5lbs/ 10-12 skinless chicken thighs (bone-in gives more flavor, but boneless works well too)
  • 1 bottle Catalina dressing
  • 1 packet dried onion soup mix
  • 1 can whole berry cranberry sauce


Pre-heat oven to 350 degrees. In rectangular baking dish or tray, combine dressing, soup mix, and cranberry sauce together. Add in chicken and coat well with the sauce. Bake for 35-45 minutes or until chicken is cooked through and sauce is caramelized on top (dark brown but not burnt). Goes well with summer salads and sides.
